Zucchini Tots

Jeff and I made these as a side with dinner and really liked them.  The guys at the station have also been fixing them and eating them up.

Zucchini Tots

Servings:Serving Size: 4 tots • Old Points: 2 pts • Points+: 3 pts
Calories: 108  • Fat: 4.3 g • Protein: 6.8 g • Carb: 11.5 g • Fiber: 1.8 g • Sugar: 2 g
Sodium: 262 mg (without salt)

Ingredients:

  • cooking spray
  • 1 packed cup grated zucchini
  • 1 large egg
  • 1/4 medium onion, minced
  • 1/4 cup grated reduced fat sharp cheddar cheese
  • 1/4 cup seasoned breadcrumbs
  • 1/4 tsp kosher salt and black pepper to taste

Directions:

Preheat oven to 400°F.  Spray a baking sheet with cooking spray.

Grate the zucchini into a clean dish towel until you have 1 packed cup.  Wring all of the excess water out of the zucchini, there will be a lot of water. In a medium bowl, combine all of the ingredients and season with salt and pepper to taste.

Spoon 1 tablespoon of mixture in your hands and roll into small ovals. Place on the cookie sheet and bake for 16 to 18 minutes, turning halfway though cooking until golden.

Movie date

Jennie and I took all the kiddos to see How to Train a Dragon 2.  I needed a way to get out of the house before I started going crazy and it was nice for Hailey to have something fun to do.  At this point it had been 1 month since surgery and I made it through the movie with my leg propped up on my crutch and lots of pain meds. 

Thanks again to Jennie for all of the dinners and entertainment that she brought me while I was stuck in my recliner!

End of the year!

While I never made it back to school after my knee injury, other than an occasional visit, these girlies finished the year off with awards and a play.  I couldn't make it out to any of the award ceremonies or performances, but I hear that Emily did a nice job!

Hailey was quite proud of herself for getting the "best award" in the class, the citizenship award.  Nice job, Hay Hay!
