I did a little experiment after reading some gardening articles and tied up the leaves of one of the cauliflower heads so that they protected the head. The result was a much whiter, crisper head of cauliflower. The other plants were still good, but this is the way to go next year. We've made a couple of batches of mashed cauliflower, following Paula Deen's recipe which is really good.
Mashed Cauliflower Recipe from Paula Deen
Ingredients:
- 1 medium head cauliflower
- 1/3 cup chicken broth, warmed
- 2 tablespoons reduced fat sour cream
- salt
- pepper
- fresh chives, thinly sliced, for garnish
Preparation:
Place the cauliflower florets in a microwave-safe bowl with 1/4 cup water, cover with plastic wrap and microwave for 3 to 5 minutes, or until completely tender.
Place the cooked cauliflower in a food processor. Add chicken broth, sour cream, salt and pepper; puree until smooth. Serve garnished with sliced chives.
